以非年份香檳的標準相比,本瓶酒有他人難以超越的多重口味,可惜氣味與口味的集中度不足,但不失為CP值高的非年份香檳佳作

Nose: Clean, medium intensity of lemon, starfruit, floral, mint, herbal, mineral and bready aromas at developing stage
Palate: Dry, high acidity, medium alcohol, medium+ bodied. Creamy mousse. Has medium+ flavour intensity of lemon zest, starfruit, mint, herbal, bready, savoury, autolysis, mineral, white pepper and mushroom flavours.  Medium+ finish

Conclusion:★★★★
A good value and sophisticatedly flavoured NV champagne though weaker in scent and concentration

Nose: Clean, medium+ intensity of strawberry, citrus, stone fruit, truffle, floral (lily), perfume, dry olive, pickled ginger, sea breeze, roasted nuts, cedar and autolysis aromas at developing stage
Palate: Dry, high crispy acidity, medium+ alcohol, full bodied. creamy mousse. Has pronounced flavor intensity of lemon zest, grapefruit, strawberry, dry mushroom, savory, cedar, mineral, spice, brioche and jinseng flavors with extremely long mouthwatering finish

What a wonderful champagne to celebrate special occasion!

視覺稍微混濁,中琥珀色
嗅覺:純淨,濃郁的酸梅,花香,蜂蜜,薰衣草,餿味,焦糖與檜木氣味,陳年中。
味覺:極甜,高酸性,中酒精濃度,豐富酒體。有濃郁李子乾,鳳梨,橘子果醬,無花果乾,蜂蜜,皮革,煙燻,肉桂與人蔘口味。長餘韻。

結論:★★★★
3年前去了一趟歐卡納根酒莊之旅,當時就對WHW這家每週只開放3小時,用馬匹代替農具,採用可重複使用的玻璃瓶蓋與手工簡單酒標的有機酒莊留下深刻印象。一般的加拿大冰酒通常使用的是Vidal葡萄,WHW薰衣草口味的冰酒則是少見的使用自家以有機耕作的黑皮諾葡萄,加上以橡木桶以釀造,更加入了薰衣草浸泡(這應是此酒稍微混濁的原因),使得這瓶酒擁有一般冰酒中少見的多元層次,豐潤而醇美。我同時把這瓶酒來PK匈牙利的Pajzos酒莊的頂級6 puttonyos貴腐甜酒,結果加拿大大勝。之前提過本酒莊已於2012年發生火警燒毀,此酒已經絕無僅有,我已經去搶購酒商的庫存來蒐藏。

Appearance: Slightly hazy medium amber
Nose: Clean, pronounced intensity of  dry plum, floral, lavender, honey, rancid, caramel and cedar aromas at developing stage
Palate: Lusciously sweet, high acidity, medium alcohol, full-bodied.  With pronounced intensity of dry plum, pineapple, orange marmalade, dry fig, leather, honey, savory, caramel, cedar, smoke, cinnamon and jinseng flavors.  Long finish.

Conclusion:★★★★ 
WHW was one of the only few wineries I was impressive during my trip in Okanagan by its 3 hours of opening per week, horse-based viticulture, reusable glass cork and simple handmade wine label.  While most icewines are made by Vidal grape, WHW used organic-grown Pinor Noir (difficult to grown in BC), macerated with lavender (maybe the reason of slight haziness), and kept the wine barrel-aged.   As a result the wine has achieved a level of complexity, richness and mellowness well beyond most just-fruity icewine peers.  I tasted the top quality 6 puttonyos Tokaji of 1999 Chateau Pajzos on the same day and the Canadian swept off my feet.  The winery was destroyed by a wild fire in 2012 so that I have been collecting their leftover stocks by all means.

這瓶「白中黑」香檳雖然具有很容易認出的黑葡萄的特徵,但口感釀造得極端均衡,中性且充滿層次,使它具備「白中黑」少有的繼續貯存潛力

Nose: Clean, medium intensity of ripe lemon, perfume, smoke, mushroom, savory, brioche and autolysis aromas at developing stage
Palate: Dry, high acidity, medium alcohol, medium+ body.  Creamy mousses.  With medium+ intensity of ripe lemon, mineral, smoke, mushroom, savory, brioche, autolysis, nutty  and cedar flavors.  Long finish.

Conclusion:★★★★ 
Though still very recognizable Blanc de Noir this champagne somehow remain a very unique neutral and structured flavors which make it more potential for ageing than most other peers Extremely balanced.

結論:★★★★
甘之若飴的雪莉酒,屬於已貯存30年的VORS等級,又是少見的flor酵母膜於釀造時自然消失的Palo Cortado極品。雖然甜味是來自於添加10%的PX雪莉酒,但味道甘醇自然,入口滿嘴芬芳,有著完美的均衡度,但少了一點點濃郁度與層次感。強烈推薦大家試試,絕對會對雪莉酒的印象完全改觀

Appearance: Clear, medium amber, legs noticed
Nose: C
lean, with medium+ dry plum, raisin, walnut, cedar, caramel, vanilla, and perfume aromas at fully developed stage
Palate: Off-dry, medium- acidity, fortified to high alcohol, and full-bodied. With medium+ dry plum, raisin, walnut, cedar, caramel, vanilla, savoury and mushroom flavours.  Long finish.

Conclusion:★★★★ 
Near outstanding  and rare Palo Cortado sherry (flor died naturally during vinification) under 30-year VORS label.  The hint of sweet is from 10% PX sherry which is well blended into scrumptious tastes.  Though layering and intensity are slighly off the perfect balance this wine is still a good showcase to blow your impression about sherry.

味覺:不甜,酸性,酒精濃度,中度酒體與綿密泡沫。有中度的葡萄柚,杏桃,梨子,布里歐麵包,礦物與些微白胡椒口味。中上餘韻。

結論:非常均衡,清淡與優雅的crémant氣泡酒,充分代表教科書中勃根地是僅次於香檳的氣泡酒產區。已達適飲期,無須繼續貯存




























CAVE DE LUGNY Crémant de Bourgogne

Appearance: Clear pale lemon
Nose: Clean, medium intensity of dry lemon, pear, floral, brioche, autolysis at developing stage
Palate: Dry, medium acidity, medium alcohol, medium body, creamy mousse.  With medium flavor intensity of grapefruit, apricot, pear, brioche, mineral and hint of white pepper. Medium+ finish
Conclusion  Very balanced, light and graceful.  Very representable showcase of Burgandy's sparkling wines which is closest to Champagne by textbook.  Drink now, not suitable for ageing.

味覺:不甜,高酸性,酒精濃度,酒體,綿密泡沫。有中上的蘋果,檸檬皮,草莓,布里歐麵包,檜木,菇類,酵母分解,煙燻與礦物口味。長餘韻。

結論:。這瓶年份香檳雖然有濃郁,多層次的口感,但過濃的礦物味破壞的它的均衡度,儘管具有大多的香檳嗅覺與味覺元素但過於精確而缺乏個性。已達適飲期,應無繼續貯存的潛力




VEUVE CLICQUOT Brut Champagne 2004

Appearance: Clear,  pale gold
Nose: Clean, medium intensity of lemon zest, steawberry, brioche, buttery and savory aromas at developing stage.
Palate: Dry, high acidity, medium alcohol and medium-bodied. Creamy mousse.  With medium+ apple, lemon zest, strawberry, brioche, cedar, savoury, mushroom, white pepper, autolysis, smoke and mineral flavors.  Long finish.
ConclusionThough pretty concentrated and complex flavors but they are too neat to have personality.  In addition the mineral flavor is over-dominant.  Drink now.  May not benefit for further ageing.

嗅覺:純淨,中上的黑李,葡萄乾,乾杏桃,黑棗,鳳梨,焦糖,檜木,與薄荷氣味,已完全陳年。
味覺:極甜,中酸性,加烈為酒精濃度,中上酒體。有濃郁黑李,柳橙皮,葡萄乾,乾杏桃,焦糖,檜木,鮮美,黑胡椒,皮革,菸草,巧克力與薄荷口味。長餘韻。

結論:★★★★ 極佳的PX雪莉酒,有非常濃郁、均衡且極端豐富的風味。這瓶從1927年開始建立的Solera酒庫中混釀的佳作僅賣30元加幣實在太過划算已可適飲,無繼續貯存的必要

Appearance: Clear, medium brown, legs noticed
Nose: C
lean, with medium+ black plum, raisin, dry apricot, prune, pineapple, caramel, cedar and menthyl aromas at fully developed stage
Palate: Lucously sweet, medium acidity, fortified to medium alcohol, and medium+ body. With pronounced black plum, orange zest, dry pricot, raisin, caramel, cedar, savoury, black pepper, leather, tobacco, chocolate and menthyl flavours.  Long length.

Conclusion★★★
  Very concentrated, balanced, PX Sherry with great complexity. Very good quality.  Not suitable for further ageing.  $30 is a terrific bargain for this PX Sherry mixed in a solera system since 1923.
