開瓶:2013-05-22於WSET第3級課程 (CAD $53)
評分:WS 90 / RP 92
視覺:清澈,深紅寶石色
嗅覺:純淨,中上的花香,黑櫻桃,肉桂,香草,烤蜜棗與土壤氣味,陳年中。
味覺:不甜,中上的酸性與單寧,高酒精濃度,豐富酒體。中上的黑櫻桃,香草,黑胡椒,可可與皮革口味。長回味長度。
結論:首次喝到高品質,絲綢質感,無過濾,由美國製酒大師Paul Hobbs釀造的阿根廷馬爾貝克。已達適飲期,無須再貯存。


酒名:CRISTOM Pinot Noir Eola-Amity Hills Eileen Vineyard 2009
產地:美國奧勒岡州威廉米特河谷
品種:Pinot Noir黑皮諾
開瓶:2013-05-29於WSET第3級課程 (CAD $82)
評分:WS 91 / RP 93
視覺:清澈,中下石榴石色,薄杯緣淚滴。
嗅覺:純淨,濃郁的覆盆子,紅櫻桃,皮革與土壤氣味,陳年中。
味覺:不甜,中下的酸性與單寧,中上酒精濃度與中度酒體。中上的紅櫻桃,香草,檜木與皮革口味。長回味長度。
結論:早已聽說奧勒岡是全世界風土與勃根地最為接近的地區,但是這是我第一次試飲到來自該州的高品質黑皮諾,可適飲也有貯存潛能。

VIÑA COBOS Malbec Luján de Cuyo Bramare 2009

Appearance: Clear, deep ruby
Nose: Clean, medium+ black cherry, floral, cinnamon, vanilla, baked plum, earthy aromas at developing stage
Palate: Dry, medium+ acidity and tannin with high alcohol and full body.  Medium+ black  cherry, vanilla, black pepper, cocoa and leather flavors with long length.
Conclusion: My first experience of high quality, silky texture, and unfiltered Argentina Malbec made by Paul Hobb.  Drink and less potential for further ageing

CRISTOM Pinot Noir Eola-Amity Hills Eileen Vineyard 2009

Tasted on 2013-05-22 at WSET Level 3 Class (CAD $82)
WS 91 / RP 93
Appearance: Clear, medium- garnet, thin legs
Nose: Clean, pronounced  raspberry, red cherry, leather and earthy aromas at developing stage
Palate: Dry, medium- acidity and tannin with medium+ alcohol and medium body.  Medium+ red cherry, vanilla, cedar and leather flavors with long length.
Conclusion: Having learned about the terroir of Oregon is the closest to Burgundy for a while, this is my first time to taste a fine quality Oregon Pinot Noir.  Drink now and have potential for further ageing.

嗅覺:純淨,濃郁的杏桃,草莓,柑橘,蜂蜜,花香與餅乾氣味,陳年中
味覺:不甜,高酸性,中度酒精濃度,中下酒體,濃郁的草莓,礦物,餅乾,烤杏仁,香草與奶油糖果口味,長餘韻

結論:含75%黑皮諾,有著醇厚與類似粉紅香檳的精采風味。已可適飲,亦有潛力繼續貯存


HENRI BILLIOT & FILS Brut Champagne 2002

Appearance: Clear, light amber, creamy mousses
Nose: Clean, pronounced apricot, strawberry, tangerine, honey, floral and biscuit aromas at developing stage
Palate: Dry, high acidity, medium alcohol, medium- body, pronounced strawberry, mineral, biscuit, toasted almond, vanilla and butter scotch flavors. Medium+ finish 

Conclusion: 75% Pinot Noir contributes this wonderful near-rosé rich-flavored champagne. Drink now and have potential for further ageing

味覺:不甜,高酸性,低酒精濃度與中下酒體。中度的檸檬,煙燻,石蠟,胡椒,青草與礦物味,中上回味長度。
結論:非常好的杭特河谷榭蜜雍代表作,可適飲也有貯存潛能。

嗅覺:純淨,中上的花香,紅櫻桃,菇類,薄荷,土壤,皮革氣味,已陳年。
味覺:不甜,中酸性,高單寧,中上酒精濃度與酒體。中上的紅櫻桃,香草,黑胡椒,土壤與薄荷口味。長回味長度。
結論:有著迷人風味的新世界風格黑皮諾,已陳年達到適飲期。

味覺:不甜,中上的酸性與單寧,中上酒精濃度與酒體。中上的藍莓,黑胡椒,香草與皮革口味。長回味長度。
結論:好喝的巴羅莎紅酒,可適飲也有貯存潛能。

Appearance: Clear, pale lemon
Nose: Clean, medium+ intensity of waxy, lemon, grassy, mineral aromas at developed stage
Palate: Dry, high acidity, low alcohol, and medium-bodied.  With medium lemon, smoky, waxy, peppery,mineral and grassy flavors.  medium+ finish
Conclusion: Very good signatured Hunter Valley Semillon.  Drink now and potential to age.

RIPPON Pinot Noir Central Otago Lake Wanaka 2007

Tasted on 2013-05-22 at WSET Level 3 Class (CAD $71)
WS 86 / RP 92
Appearance: Clear, medium+ garnet, bubbles on the rim
Nose: Clean, medium+ floral, red cherry, mushroom, mint, earthy, leather aromas at developing stage
Palate: Dry, medium acidity and high tannin with medium+ alcohol and body.  Medium+ red cherry, vanilla, black pepper, earthy and mint flavors with long length.
Conclusion: Very well represented New World Pinot Noir.  Has complete its ageing and ready to drink.

LANGMEIL Shiraz Barossa Orphan Bank 2008

Appearance: Clear, dark ruby, thick legs
Nose: Clean, medium+ floral, vanilla, blueberry, leather and peppery aromas at developing stage
Palate: Dry, medium+ acidity and tannin with medium+ alcohol and body.  Medium+ blackberry, pepper, vanilla, and leather flavors with long length.
Conclusion: Very good.  Drink now and have potential for further ageing.

LE VIEUX DONJON Châteauneuf-du-Pape 2010 ★★★★

評分WS 96 / RP 96 2012 Wine Spectactor 2012年百大葡萄酒第16名

視覺:清澈,深紅寶石色,厚淚滴
嗅覺:純淨,中上濃度的黑櫻桃,香草,菇類與花香氣味,陳年中
味覺:不甜,中上酸性,高單寧,高酒精濃度,豐富酒體,中上濃度的李子,桑葚,香草,檜木與胡椒風味。長回味長度

結論:第二次試飲這瓶酒以後更能體會為什麼他的評分會這麼高。這瓶年輕的紅酒剛開瓶時味道有些平淡,但醒酒2小時之後所有的味道開始集中,在Sowine中真空貯存24小時之後所有的潛力才更加發揮。現在太年輕不宜開瓶,需再繼續貯存2-3年以上


LE VIEUX DONJON
Châteauneuf-du-Pape 2010
Bought at BC Liquor (CAD $60)
Tasted at Vancouver home on 2013-05-21
WS 96, #16 of 2012 Top 100 / RP 96 

Appearance: Clear, dark ruby, thick legs

Nose: Clean, medium+ intensity of black cherry, vanilla, mushroom and floral notes. Developing stage.
Palate: Dry and medium+ acidity. High tannin, high alcohol and full bodied. With medium+ intensity of plum, blackberry, vanilla, cedar and peppery flavors. Long Finish.

Conclusion: 
Tried this wine for the second time and more appreciated why it is so highly-rated.  The wine is too young to drink now so it tasted dull just opened.  All flavors start to concentrate significantly after decanting for 2 hours. It performed its best to me while I kept it vacuumed on my Sowine for 24 hours.  Don't open this wine now and let it sit for another 2-3 years.

結論:大受歡迎的新世界風格葡萄牙紅酒,可適飲也有貯存潛能。

Conclusion: Nice Chardonnay grown nearby Silicon Valley.  Drink now and can age further.

味覺:不甜,中上酸性,中下單寧,中度酒體,中上酒精濃度,中上味覺濃度,咖啡,巧克力,桑葚,檜木,長回味長度
結論:難以想像希臘的紅酒也有勃根地風味已可適飲。


酒名CHÂTEAU PAJZOS Tokaji Aszú 5 Puttonyos 1999
產地:匈牙利Tokaji
品種:Furmint為主的Tokaji混釀

視覺清澈,中琥珀色
嗅覺:純淨,濃郁嗅覺濃度,葡萄乾,蜂蜜,水果乾,香草,陳年
味覺:高度甜度,高度酸性,重度酒體,低酒精濃度,濃郁味覺濃度,蜂蜜,柑橘,橡木,辛辣,百香果,杏桃乾,長回味長度
結論:非常好喝的都凱(Tokaji)貴腐甜酒,均衡的風味讓人喝不出來實際的高甜度已可適飲,但繼續貯存應會更好。

Appearance: Clear, medium garnet, legs
Nose: Clean, prounced intensity, earthy,wet leave, tobacco, fruit candy,petro, oak, spice, developing
Palate: Dry, medium+ acidity, medium- tannin, medium body, medium+ alcohol, medium+ flavor intensity, coffee, chocolate, blackberry, cedar, long length
Conclusion: Can't imagine Greece wine may also have Burgundy flavors.  Drink now.



CHÂTEAU PAJZOS Tokaji Aszú 5 Puttonyos 1999


Tasted on 2013-05-01 at WSET Level 3 Class (CAD $70)
WS 95
Appearance: Clear, medium amber 
Nose: Clean, pronounced intensity, raisin, honey,dry fruit, vanilla, developing
Palate: Sweet, high acidity, full body, low alcohol, high flavor intensity, honey, tangerine, oak spice, passion fruit, dry apricot, long length
Conclusion:  Excellent Tokaji.  A sweet wine which is so balanced to lose its sweetness.  Drink now but can definitely develop further.
